Summer savory is a hardy, pubescent annual, with slender erect stems. The plant blooms in spring to summer. It bears very small, pale lilac-pink flowers borne in widely spaced axillary whorls of 2 to 5 flower clusters. The leaves have a pungent spicy scent. It was (and is) used as a sauce seasoning that was poured over poultry, fish, and meat as well as used as an ‘antiseptic’ for the entire digestive tract. It has aromatic properties, and may be added to medicines for its aromatic and warming qualities.
