Stellate sturgeons have slim, greyish-green or brown bodies with pale bellies. Their snouts are long, thin and straight with a row of five small barbells close to their mouths and 30-40 pale scales on the lateral line. This fish grows up to 220 cm long and weighs up to 80 kg. It feeds at night on fish, worms, crustaceans and molluscs. Its lifespan is 27 years.
