At first, it doesn’t taste sweet on the tip of your tongue. But when it mixes with saliva, it becomes quite sweet.
Science Behind It:
A molecule of starch is composed of a chain of sugar molecules, which can be broken into separate links by enzymes, proteins that cause chemical reactions. The enzyme (ptyalin) in your saliva splits the starch into its sugar links. The links dissolve in your digestive juices and then move easily into your intestines, through the wall into the bloodstream, and then along the bloodstream to the cells.
