Green Eggs (Creative Chemistry Experiments)

You will need:

  1. Eggs
  2. Red cabbage
  3. Spoon
  4. Pan
  5. Strainer

INSTRUCTIONS

  1. Firstly, ask an adult to chop up and heat a red cabbage till it softens.
  2. Once it has cooled, keep it in the fridge for 15-20 minutes and cool it down.
  3. Strain the cabbage and use the juice that you have strained.
  4. Take your eggs and ask an adult to help you separate the egg whites from the egg yolks. Keep the yolks aside.
  5. Mix a small amount of cabbage juice (about 1 teaspoonful) with the egg whites.
  6. Ask an adult to fry the egg for you in a pan.

RESULT

The fried egg whites will no longer be white in colour, but rather blue- green! This is because the anthocyanin in the cabbage acts as a Ph balance test. It comes in contact with the egg whites, which are alkaline in nature. It turns the mixture blue-green!
