The Japanese sit on a tatami floor with a low table for their meals. In a formal arrangement, it is customary for everyone to sit with his or her knees tucked under. No one begins the meal until a gesture is made to do so. At the beginning of every meal, ‘Itadakimasu’ (I gratefully receive) is said and at the end of every meal the diner says–‘Gochisosama’ (Thank you for the meal).
