Chicory is a tender perennial grown as an annual plant. It is sometimes known as Italian chicory. It is a woody plant. Chicory has long, deep taproot that is milky inside. Radicchio leaves are stalked, hairy, lanceolate and large, coarsely toothed, growing in clustered formation from plant base in spreading rosette while the upper leaves are small. The small red and white heads of this chicory family member form best in cool weather. It is a staple vegetable in Italian salads with its bright colour and bitter taste but not overpowering flavour. It is a nutritious vegetable.
