The plant is a small, low-growing shrub with curled branches. It is a perennial with a woody, fibrous root. There are three varieties usually grown for use, the broad-leaved, narrow-leaved and variegated. Thyme will grow on rocky soil and will spread over rocks and walkways. The plant has an agreeable aromatic smell and a warm pungent taste. The fragrance of its leaves is due to an essential oil, which gives it its flavouring value for culinary purposes. Thyme has various medicinal uses such as antiseptic, antispasmodic, tonic and carminative.
