Just like snow and ice melt when the temperature warms, butter also melts with a change in temperature. No chemical bonds are broken or formed during the melting process; only a change from solid to liquid occurs. The change in temperature results in a shift in the equilibrium between it being solid and liquid. However, butter is comprised of different kinds of fats that melt at different temperatures. Therefore, butter will soften at different temperatures, and finally will become a liquid.
Why does butter melt?
